Chicken Mole with Roasted Vegetables
This is a quick and healthy chicken recipe. The veggies are roasted in Mole sauce will give you  a unique taste of  traditional Mexican salsa  made with chocolate, nuts, dried chiles, and tons of spices.






Ingredients

 

    1 cup cauliflower
    1 cup butternut squash, cubed
    1/2 tbsp. unsweetened cocoa powder
    1/2 tbsp. smoked paprika
    1/2 tsp. garlic powder
    Pinch ancho chile powder
    1/2 cup shredded chicken breast
    2 tbsp. prepared mole sauce


Preparation

 

    Preheat the oven to 425 degrees.
    Spray the cauliflower and butternut squash with cooking spray 
    Mix with the cocoa powder, paprika, garlic powder, and chile powder
    Lay flat on a baking sheet and roast for until tender.
    Warm the mole sauce in the microwave for about 30 seconds.
    Top the roasted veggies with chicken and mole sauce.
